Preparation

  1. Sauté the shallots in butter. Add the black pepper and thyme and sauté for 3 minutes. 
  2. Add the Marsala and sherry and simmer until reduced by half – approximately 8 minutes. 
  3. Add the demi-glace and simmer until thickened. 
  4. Create a slurry with starch and water and add it to the sauce. 
  5. Sauté the sliced mushrooms in olive oil until brown and tender. 
  6. Fold the heavy cream and mushrooms into the sauce. 
  7. Remove from heat and add Red Arrow product to above mixture, mix until combined.
