Preparation

  1. Add the phosphate to the water as it is stirring on a stir plate. Allow the solution to become clear before adding the salt.
  2. Add the salt and stir until completely dissolved.
  3. Add the black pepper.
  4. Add Red Arrow product to above mixture and mix until combined.  
  5. Add 15% marinade to 85% beef weight. Place the beef in a vacuum bag, add the marinade and seal. Vacuum tumble for 30 minutes at a vacuum of 20Hg. 
  6. Bake covered for 2 hours at 300°F to an internal temperature of 165°F.
  7. Optional: Add onions, carrots and celery to the pan. Use the same amount of carrots and celery and twice that amount of onions.
