Preparation

  1. Peel the eggplant and cut lengthwise into strips about ¼”. Sauté in a pan with salt until tender.  Dice the eggplant. 
  2. Combine the Red Arrow product with the diced eggplant and remaining ingredients.
  3. Sauté in a pan for 10 minutes of simmer heat. 
  4. Remove from heat and allow to cool. 
  5. Serve cold or at room temperature.  
*Suggestion:  Serve on garlic toasted bread with a layer of cream cheese and top with this garnish.
