Preparation

  1. Combine the onion, mushrooms, leeks, celery, carrots, fennel, parsnips, garlic, olive oil, tomato paste, parsley and mix thoroughly.
  2. Spread out on a sheet pan and bake at 350°F stirring occasionally until the vegetables are caramelized.
  3. Place the vegetables in a large pot and add the red wine and cook until the red wine has reduced to almost dry.
  4. Add the water, bay leaf, black peppercorns and thyme leaves.  Bring to a simmer and hold for 4 hours.
  5. Strain and reduce sauce to consistency.
  6. Add the Red Arrow products.
