Team Captain Dave Salm is the Executive Chef of Al Corso Restaurant, located at 20931 Main Street, Collins, Wisconsin.  Al Corso presents gourmet food in a warm setting located amidst a 4,200 acre state wildlife area. The restaurant was founded in 2007 with Chef Salm’s wife and business partner, Alexandria. Chef Salm of Chilton, Wis. is a graduate of the Fox Valley Technical College Culinary Program in Appleton. His professional career began at his parent’s family restaurant. His passion continues today by learning new ways to use fresh, quality ingredients. Salm’s inspiration comes from reading and participating in workshops with chefs that are paving the way for innovation in the culinary and barbeque industry. His cooking style is rooted in the French tradition with contemporary appeal for his guests. Chef Salm’s knowledge and experience gives him the opportunity to bring dining to a new level. Salm is honored to be included as one of the Best Chefs in America for the second consecutive year in 2014.
